What you need

  • 1 cup Pauls Vanilla Custard
  • 1 puff pastry sheet, thawed, store bought
  • 3 tbsp melted butter
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • ½ cup roughly chopped walnuts
  • 2 pears, cored and cut into 1cm slices
  • 1 egg, whisked in a small bowl

How To Make It

  1. Heat oven to 180 degrees. Line a baking tray with baking paper and set aside.
  2. Lightly flour the bench and place pastry down, dusting pastry with a little more flour.
  3. Cut pastry in half then cut each half into four rectangles. Next, cut each rectangle diagonally into two triangles.
  4. In a bowl, mix together sugar and spices until combined. In a separate bowl, whisk egg lightly.
  5. Brush the melted butter lightly over triangles. Sprinkle spice mix and walnuts evenly over triangles. Place pear slice toward wider end of triangle and start rolling from the same end until a crescent shape is achieved.
  6. Brush lightly with egg wash and place in preheated oven for 20 minutes or until golden brown. Timing can depend on type of puff pastry used so keep a close eye on it.
  7. Set aside scrolls to cool for 5 minutes then drizzle with custard.
