What you need

  • 1/4 cup softened butter
  • 1/4 cup soft brown sugar
  • 1 egg, lightly beaten
  • 1/4 cup golden syrup
  • 2 tsps ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp bicarbonate soda
  • 1 1/2 cups plain flour
  • 1 egg white, for icing
  • 1 1/2 cups icing sugar, for icing

How To Make It

  1. Beat butter and sugar in a small bowl until light and fluffy.
  2. Add egg and golden syrup and beat until combined.
  3. Mix in spices and bicarb soda and then gradually mix in the flour to form a dough. Lightly knead the dough to bring it together into a smooth ball.
  4. Wrap dough in cling film and rest in fridge for 15 minutes.
  5. Pre-heat oven to 180oC and a line baking tray with baking paper.
  6. Roll out dough (in batches depending on the size of your baking tray) on a lightly floured surface to 4 mm thickness. Cut out gingerbread men and star shapes and place on baking tray.
  7. Bake in oven for 7-9 minutes or until brown. Cool on a wire rack
  8. When completely cooled down the gingerbread men and stars with icing.
  9. Store the finished gingerbread shapes in an airtight container until ready to make the Gingerbread Trifle.

Icing

  1. Beat egg white in a small bowl using an electric beater until soft peaks form.
  2. Gradually beat in the icing sugar until stiff peaks form.
  3. Place icing in a piping bag fitted with a fine nozzle and use to decorate the gingerbread.
