Coconut Custard Meringues with Banana Salad

                                   Physical No Fat          Trim

Ingredients

                        

  • 1/4 cup custard powder
  • 2 tablespoons castor sugar
  • 2 cups  Pauls Slim or  Skinny or Physical No Fat Milk
  • 1/3 cup desiccated coconut
  • 2 bananas, sliced
  • 2 oranges, segmented
  • 1/4 cup passionfruit
  • 10 preprepared meringues

Method

  1. Combine custard powder and castor sugar in a saucepan with a little milk to form a paste.
  2. Add remaining milk and coconut and heat, stirring until thickened.
  3. Cool and fold in cream.
  4. Top meringues wih custard and fruit and serve.

Banana Salad:
Combine bananas, oranges and passionfruit together.

**This recipe is suitable for lacto-ovo vegetarians who have adopted a vegetarian diet for health reasons.
