Macaroni Cheese with Chicken and Pesto

Ingredients

  • 25g Australian Butter
  • 1 onion, chopped
  • 2 tablespoons flour
  • 2 1/2 cups Pauls Milk, warmed
  • 1/4 cup prepared pesto
  • 250g penne pasta, cooked
  • 2 cups chopped BBQ chicken
  • 2 zucchini, sliced, blanched
  • 1 cup grated Australian Cheddar Cheese
  • salt and peppr, to taste
  • 1/4 cup grated Australian Parmesan Cheese
  • 1/4 cup fresh white breadcrumbs

Method

  1. Butter a 2 litre (8cup) capacity ovenproof dish or individual dishes.
  2. Melt butter and cook onion for 3 minutes or until soft.
  3. Add flour and cook for a further 2 minutes.
  4. Add milk and stir until mixture just boils and thickens.
  5. Stir in pesto, pasta, chicken, zucchini and half the cheddar cheese.
  6. Season to taste.
  7. Place in prepared dish.Combine remaining cheddar with Parmesan and breadcrumbs and sprinkle over pasta.
  8. Bake at 180°C for 15-20 minutes or until top is lightly browned.
