Potato, Bacon and Corn Chowder
Ingredients

10g Australian Butter

1 onion, chopped

2 rashers bacon, chopped

300g orange sweet potato, peeled and chopped

300g potato, peeled and chopped

1 tablespoon flour

2 cups (500mL) chicken stock

1 cup Pauls Milk
-
310g can creamed corn
-
1 cup grated Australian Swiss-style Cheese, for garnish

fresh parsley, for garnishing
Method

Heat butter until melted, add onion and cook, stirring until softened.

Add bacon and potatoes and cook, stirring for 3 minutes.

Add flour and cook for a further minute.

Add stock and simmer, covered for 15 minutes or until the potatoes are tender.

Add milk, creamed corn and season to taste.

Reheat without boiling.

Serve soup with grated cheese and garnish with parsley.
