Cheesey Damper Knots
Ingredients

125g self raising flour

125g self raising wholemeal flour

20g Australian Skim Milk Powder

3 spring onions, finely chopped

90g grated Australian Cheddar Cheese

250ml Pauls Milk

egg yolk, for glazing

poppy seeds, for sprinkling
Method

Sift flours and milk powder together.

Mix in spring onions and cheese.

Make a well in the centre, add milk and combine to form a soft dough.

Knead lightly on a floured board until smooth.

Divide into 6 pieces, roll each piece out to approximately 15cm and fold to form a knot.

Place on a buttered baking tray, brush with egg yolk and sprinkle with poppy seeds and bake at 220°C for 15 minutes.
HINT: Try substituting 1/2 cup grated carrot or grated zucchini for the spring onion.
