Apricot Choc Muffins
Ingredients

1/4 cup Australian Butter, melted for brushing muffin tray

2 cups self raising flour

1/4 cup castor sugar

1/4 cup chopped dried apricots

1/4 cup chocolate chips

1 cup Pauls Milk
-
1 egg, lightly beaten

1/3 cup Australian Butter, extra, melted

1/2 cup cream cheese, for serving (optional)
Method

Butter muffin tin.

Sift flour and sugar into a big bowl.

Add apricots and chocolate and make a well in the centre.

Whisk milk, egg and butter together and mix into flour until well combined.

Spoon batter into muffin pan.

Bake at 220°C for 20 minutes.

Once cooked, loosen muffin edges and serve hot or cold with cream cheese.
