Apricot Choc Muffins

Ingredients

  • 1/4 cup Australian Butter, melted for brushing muffin tray
  • 2 cups self raising flour
  • 1/4 cup castor sugar
  • 1/4 cup chopped dried apricots
  • 1/4 cup chocolate chips
  • 1 cup Pauls Milk
  • 1 egg, lightly beaten
  • 1/3 cup Australian Butter, extra, melted
  • 1/2 cup  cream cheese, for serving (optional)

Method

  1. Butter muffin tin.
  2. Sift flour and sugar into a big bowl.
  3. Add apricots and chocolate and make a well in the centre. 
  4. Whisk milk, egg and butter together and mix into flour until well combined. 
  5. Spoon batter into muffin pan.
  6. Bake at 220°C for 20 minutes.
  7. Once cooked, loosen muffin edges and serve hot or cold with cream cheese.
