Crunchy Bran Muffins
Ingredients

1 cup Pauls Buttermilk
- 1 teaspoon bi-carbonate soda
- 1 cup SR flour
- ¼ teaspoon salt
- ½ cup butter
- ¾ cup brown sugar
- 1 egg
- 1 tablespoon treacle
- 1 cup bran
- ¼ cup raisins (finely chopped)
- ¼ cup walnuts (chopped)
Method
- Combine Pauls Buttermilk and soda. Set aside.
- Cream butter and brown sugar, add egg. Beat well.
- Add Pauls Buttermilk and soda, then treacle and bran. Blend.
- Stir in flour and salt, fold in fruit and nuts.
- Spoon into muffin pans, bake in moderate oven 20 minutes.
