Crunchy Bran Muffins

Ingredients

  • 1 cup Pauls Buttermilk
  • 1 teaspoon bi-carbonate soda
  • 1 cup SR flour
  • ¼ teaspoon salt
  • ½ cup butter
  • ¾ cup brown sugar
  • 1 egg
  • 1 tablespoon treacle
  • 1 cup bran
  • ¼ cup raisins (finely chopped)
  • ¼ cup walnuts (chopped)

Method

  1. Combine Pauls Buttermilk and soda. Set aside.
  2. Cream butter and brown sugar, add egg. Beat well.
  3. Add Pauls Buttermilk and soda, then treacle and bran. Blend.
  4. Stir in flour and salt, fold in fruit and nuts.
  5. Spoon into muffin pans, bake in moderate oven 20 minutes.
