Jam Filled Muffins

Ingredients

  • 1½ cup plain flour
  • ¼ cup castor sugar
  • 2 teaspoons baking powder
  • ½ teaspoon bi-carbonate soda
  • ¼ cup butter
  • 200g Pauls Natural Set Yoghurt
  • ¼ cup Pauls Buttermilk
  • 1 egg
  • plum jam

Method

  • Blend dry ingredients.
  • Melt butter, stir in yoghurt, milk and egg.
  • Add to dry ingredients. Mix lightly.
  • Half fill muffin pans with mixture.
  • Place a teaspoon of jam and top with remaining mixture.
  • Bake in a moderate oven 20 minutes.
