Apple Cinnamon Muffins
Ingredients
- ½ cup butter
- ¾ cup castor sugar
- 1 egg beaten

1 cup Pauls Buttermilk

½ teaspoon salt
- 1½ cups diced Granny Smith apples (lightly cooked)
- 1 cup plain flour
- ¾ cup wholemeal plain flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
Topping
-
1 teaspoon cinnamon
- 2-3 tablespoons castor sugar
Method
- Blend butter, sugar and egg till smooth.
- Add buttermilk, salt, apples - mix well.
- Stir together flour, baking powder and cinnamon stirring only to a rough mix.
- Spoon into muffin pans, sprinkle with topping.
- Bake in a moderate oven 20 minutes.
