Apricot & Walnut Buttermilk Loaf

Ingredients

  • ¼ cup chopped dried apricots
  • 1 cup Pauls Buttermilk
  • ½ teaspoon bicarbonate of soda
  • 60g butter
  • 125g brown sugar
  • 2 eggs
  • pinch salt
  • 185g self raising flour (try wholemeal flour)
  • ½ cup walnuts (chopped)

Method

  1. Soak apricots in Buttermilk while preparing the mixture.
  2. Stir in the bicarbonate of soda.
  3. Cream butter and sugar, beat in the eggs one at a time and add salt. 
  4. Fold in flour and Buttermilk mixture alternately. 
  5. Fold walnuts through. Turn into a prepared loaf tin.
  6. Brush top with a little Buttermilk and sprinkle with 2 tablespoons chopped walnuts and 1 tablespoon of sugar.

Bake at 180 C for 45 minutes
