Apricot & Walnut Buttermilk Loaf
Ingredients
- ¼ cup chopped dried apricots
- 1 cup Pauls Buttermilk
- ½ teaspoon bicarbonate of soda
- 60g butter
- 125g brown sugar
- 2 eggs
- pinch salt
- 185g self raising flour (try wholemeal flour)
- ½ cup walnuts (chopped)
Method
- Soak apricots in Buttermilk while preparing the mixture.
- Stir in the bicarbonate of soda.
- Cream butter and sugar, beat in the eggs one at a time and add salt.
- Fold in flour and Buttermilk mixture alternately.
- Fold walnuts through. Turn into a prepared loaf tin.
- Brush top with a little Buttermilk and sprinkle with 2 tablespoons chopped walnuts and 1 tablespoon of sugar.
Bake at 180 C for 45 minutes
