Buttermilk Pikelets

Ingredients

  • ½ cup sugar
  • 2 eggs
  • 1 cup Pauls Buttermilk
  • 1¼ cups SR flour
  • ¼ teaspoon bi-carbonate soda
  • pinch salt 

Method

1. Beat eggs and sugar together. 
2. Add Pauls Buttermilk and beat for 1 minute. 
3. Gently fold in the sifted flour, soda and salt to form a smooth batter. 
4. Heat a frypan to moderate and place a spoonful of batter, turn when bubbles appear and cook other side.
