Warm Spanish Potato Salad

Ingredients

  • 1kg peeled potatoes
  • ½ red capsicum, diced
  • ½ yellow capsicum, diced
  • 2 bacon rashers, diced
  • 1 tbsp oil
  • 1 tbsp paprika
  • 250g Pauls Sour Light Cream
  • Chives for garnishing

Method

  1. Boil potatoes in salted water until just tender, but not too soft.
  2. Drain and set aside.
  3. In a non-stick fry pan, heat the oil and cook the capsicum and bacon until soft.
  4. Add paprika and cook for a further minute.
  5. Stir in sour cream and bring to boil.
  6. Add potatoes and warm them in the sauce.
  7. Add salt and pepper to taste.
  8. Spoon into a serving bowl and sprinkle over chopped chives.
