Warm Spanish Potato Salad

Boil potatoes in salted water until just tender, but not too soft.

Drain and set aside.

In a non-stick fry pan, heat the oil and cook the capsicum and bacon until soft.

Add paprika and cook for a further minute.

Stir in sour cream and bring to boil.

Add potatoes and warm them in the sauce.

Add salt and pepper to taste.

Spoon into a serving bowl and sprinkle over chopped chives.
